Easy 4 Ingredient Peanut Butter Blossom Cookies
Posted by admin on
These Easy Peanut Butter Blossom Cookies are made with just 4 simple ingredients, and ready in less than 30 minutes! A gluten-free cookie recipe perfect for the holidays!
Why this recipe works:
Letting the dough cool helps the cookies keep their shape.
Since they use no flour, these cookies are naturally gluten-free.
Rolling in sugar gives them their tell-tale crinkly texture.
How to Make these 4 Ingredient Peanut Butter Blossom Cookies
Start by preheating your oven to 350F & lining a large baking sheet with parchment paper, or coating with nonstick spray. Set baking sheet aside, and mix together 1 cup of natural (the runny kind) creamy peanut butter, 1 egg, and 1 cup of sugar until combined. Stick bowl of dough into the freezer for 5 minutes, or if more time allows, the refrigerator for 10 minutes.
Add 2 tablespoons of sugar to a small bowl. Remove dough from refrigerator/freezer, and grease hands with cooking oil or spray. Roll dough into golf-size balls (makes about 15), and roll into sugar until coated on all sides.
Place each ball onto prepared baking sheet (do not flatten) & bake in preheated oven for 12-15 minutes, or until golden on bottom.
While cookies are baking, unwrap 15 Hershey Kisses, and set aside. Remove cookies from oven, and immediately press a Hershey kiss in the middle of each. Let cool on baking sheet for 5 minutes before moving to a wire cooling rack to fully cool.
Pro Tips
- Chill the dough in the freezer for 10 minutes to firm up their texture.
- Do not flatten the dough before baking.
- Press Hershey kisses into the middle of each cookie immediately after removing from the oven.
