butter-free snickerdoodle cookies

If you’ve been following my instagram stories, you know I’ve been doing quite a bit of baking during this quarantine. I was not much of a baker before, but I have a sweet tooth and I love being in the kitchen. Oh, and I have a lot of time on my hands.

We ran out of butter and are limiting our supermarket runs to once every 10 days or so. I was in the mood for something sweet, so I searched Pinterest for baking recipes without butter. Most of the recipes I found were no-bake cookies with peanut butter and oats. Guess what else I ran out of this week? However, I did see a few recipes for sugar cookies that called for vegetable oil rather than butter. I decided to take a shot at it… only to realize that we don’t have vegetable oil. Don’t fret – when this girl craves sugar, she finds a way.

I substituted vegetable oil for a smaller amount of olive oil and oh… my goodness. These are quite possibly the best batch of cookies I’ve ever made! I can’t wait to hear what you all think.

Butter-Free Snickerdoodle Cookie Recipe

Yields: 40 cookies

Prep time: 10 minutes
Cook time: 10 minutes (per 12 cookies)
Total time: 20-60 minutes

Cookie dough ingredients:

  • 1 1/4 cups olive oil (300ml aceite de oliva)
  • 1 1/2 cups white sugar (250g azúcar blanco)
  • 2 eggs (2 huevos)
  • 1 tsp vanilla extract (5ml o 1 cuchara de aroma vainilla)
  • 3 cups all purpose flour (390g harina)
  • 1 tsp baking soda (5ml o 1 cuchara de bicarbonato sódico)
  • 1/2 tsp salt (2.5ml o 1/2 cuchara de sal)
  • 2 tsp cinnamon (10ml o 2 cucharas de canela)

Cinnamon sugar coating ingredients:

  • 3 Tbsp sugar (45 ml o 3 cucharadas de azúcar blanco)
  • 1 Tbsp cinnamon (15ml o 1 cucharada de canela)

Instructions (English)

Preheat oven to 375 F/ 190 C

In a large bowl, mix the oil, sugar, egg, and vanilla using a hand-held mixer or stand mixer until smooth. Then, add the flour, baking soda, salt and cinnamon and mix until a dough forms.

In a small bowl, mix the sugar and cinnamon together.

Using a teaspoon, scoop the batter into a small ball and drop it in the bowl of cinnamon sugar. Coat each ball in the mixture and place them on a piece of parchment paper or a greased baking sheet.

Bake cookies for 8-10 minutes. Remove from oven and place the cookies on a cooling rack.

Calentar el horno a 375 F /190 C

En un cuenco grande, mezclar el aceite, el azúcar, los huevos, y la vainilla con una batidora de mano hasta que esté suave. Añade la harina, el bicarbonato sódico, la sal, y la canela y sigue mezclando hasta que se forme una masa.

En un cuenco pequeño, mezcla el azúcar y la canela.

Usando una cuchara, coge un poco de la masa y ponla en el cuenco con la canela y el azúcar. Cubre las bolitas completamente y ponlas en papel del horno y en una bandeja de horno.

Mete la bandeja en el horno por 8-10 minutos. Saca la bandeja y pon las galletas en una rejilla o en un plato para que se enfríen.
