I am sharing this brand new super delicious recipe for a Thai Chicken Pizza because you all seemed to love our Chicken Fajita Flatbread that we shared a while back!
So, a few years ago, I had this amazing assistant who would sometimes help with recipe creation when I was traveling. I mean…life was a lot different back then. We were a two income household, my ex husband and I both had a busy travel schedule, and Angeline was a busybody teenager.
Life was chaotic, but having an almost full time virtual assistant helped me keep my personal life in order, and helped this little old blog to not only survive when I was off the grid on safari with Angeline for Spring Break (yes, she was spoiled), but THRIVE!
Ronni came up with this fantastic Chicken Fajita Flatbread Pizza Recipe and people still search for it on Google. So I think that you all will love our Thai Chicken Pizza just as much!
I just KNOW that you will all adore this easy Thai Chicken concept because it is so fun and easy to make! If you love California Pizza Kitchen, you will find this much more delicious than those overpriced greasy pizzas from your local pizzeria.
I mean, I love a good greasy pizza as much as the next gal, but my indigestion certainly does not agree.

One of the best things about this Thai Pizza Recipe is that we are skipping the homemade pizza dough and using a store bought flatbread as our pizza crust! If you have ever had a California pizza kitchen Thai chicken pizza, you will find that they use something similar to a flatbread as well.
Using a store bought flatbread not only saves us time AND money in making our delicious easy Thai chicken pizza recipe, but it allows us to skip the use of a pizza stone as well. While home made pizza dough can be utterly delicious, I am more a fan of thin cust pizzas, so I love flatbreads!

Do you love making pizza for yourself at home?
To be honest, I grew up in a house where ordering pizza was like, THE THING TO DO on a Friday night. My parents were super strict and very rarely allowed me to go out with friends or anything, so I guess they made our Friday nights a special family night instead.
Granted, we never had anything like a Sweet Chili Chicken Pizza or a Pad Thai Pizza - those were things I discovered as I grew up and began eating international food.
I have so many memories of waiting for Dominos pizza to arrive...and we ordered it so often (I mean, I am 42 years old now, so I may be completely forgetting how it really went down) that I have literally never once again eaten that disgusting pizza. It is SO gross, guys. Yuck.
Making your own great pizza is so much easier than I ever thought! Who needs frozen crap that doesn't crisp up correctly? Sure, it is fine in a pinch...but does it turn out like THIS? Does it have a delicious Asian Pizza Sauce? Peanut Sauce Pizza is slowly becoming one of my favorites!
How to Make This Thai Chicken Pizza
Here are the ingredients that you will need to make the Thai Chicken Pizza Bread
2 medium sized flat breads or 1 large prepared flatbread. You can use a store bought flatbread for our Thai Chicken Pizza, or use your favorite recipe.
Here are the ingredients that you will need to make the Thai Chicken Pizza Sauce
- peanut butter
- 2 tablespoons soy sauce
- rice vinegar
- honey
- minced ginger or ginger powder
- garlic powder
- dried basil
- water
- sriracha (optional)
Here are the ingredients that you will need to make the Thai Chicken Pizza Toppings
- chicken breast, cooked and sliced
- red bell pepper, thinly sliced
- medium carrots, shredded (or ½ cup of carrot matchsticks)
- green onion stalks, sliced
- mozzarella cheese
- crushed peanuts
- Lime wedges for serving
- Cilantro for garnish

Directions for how to make our Thai Chicken Pizza
Preheat the oven to 375 degrees. Prepare the flatbread and place it on a baking sheet lined with aluminum foil.
In a medium bowl, whisk together the peanut butter and water until it is smooth. This is going to be the base of the Thai peanut sauce! Add in the remaining peanut butter sauce ingredients and combine them all together by whisking them well.
Spread peanut sauce over the flatbread in a thick layer. Make sure that you save ¼ aside for drizzling at the end.
Spread a layer of the sliced chicken across the top of the peanut sauce.
Pile on the red bell pepper, carrot shreds, green onions, and the mozzarella cheese.
See how easy that was?!
Now you are going to bake your Thai chicken pizza with peanut sauce recipe for 8-10 minutes, until the mozzarella cheese is melted.
Drizzle the remaining peanut sauce on top of the Asian pizza recipe. Sprinkle on fresh cilantro, crushed peanuts and a squeeze of lime.
Add in the remaining peanut butter sauce ingredients and combine. Spread a thick layer of the sauce over the flatbread, saving ¼ aside for drizzling at the end.
Spread a layer of the sliced chicken across the top of the peanut sauce.
Pile on the red bell pepper, carrot shreds, green onions, and mozzarella cheese.
Bake the flatbread for 8-10 minutes until the cheese is melted.
Drizzle the remaining peanut sauce on top of the pizza. Sprinkle on fresh cilantro, crushed peanuts and a squeeze of lime.
This Thai Chicken Pizza Recipe serves one adult each! They are very easy to make several at a time, so don't be afraid to make extra!

- Thai Chicken Flatbread Pizza Recipe Sauce:
- ½ cup peanut butter
- 2 tablespoons soy sauce
- 1 teaspoon rice vinegar
- 1 tablespoon honey
- 1 teaspoon minced ginger or ginger powder
- 1 teaspoon garlic powder
- 1 teaspoon dried basil
- ¼ cup water
- ½ teaspoon sriracha optional
- Thai Chicken Flatbread Pizza Recipe Toppings:
- 1 chicken breast cooked and sliced
- 1 red bell pepper thinly sliced
- 2 medium carrots shredded (or ½ cup of carrot matchsticks)
- 2 green onion stalks sliced
- 1½ cups mozzarella cheese
- ⅓ cup crushed peanuts
- Lime wedges for serving
- Cilantro for garnish
