Did you know it's National Popcorn Day? I'm definitely all for a day that celebrates popcorn and I thought it would be the perfect time to share this decadently delicious raspberry chocolate recipe. This dressed up popcorn would be perfect to serve as part of a popcorn bar at a party. Incidentally, Valentine's Day will be here soon and a popcorn bar with lots of pin and red toppings would be perfect for a heart day soiree no?

My love affair with popcorn goes back a long way. For as long as I can remember my mom would air pop some popcorn and sprinkle it with salt in the evenings. It was my favorite weekend treat when I was a wee one. Now, my popcorn tastes might have grown up a bit over the years, but I still love it just as much now as I did as a kiddo. I'm willing to bet you do too!

Lately, I've found myself experimenting with my favorite flavors to see if they work on popcorn. Two flavors that I think go perfectly together are raspberry and chocolate...And lo and behold, they're both delicious with popcorn. The sweetness of the raspberry glaze and chocolate, paired with the natural saltiness of the popcorn, make for a lovely combination.

Raspberry Chocolate Popcorn Ingredients:

6-8 cups of popped popcorn
3/4 cup of fresh raspberries
1/4 cup of powdered sugar
1 tbs of water
1 cup of chocolate morsels

Raspberry Chocolate Popcorn Directions:

  1. Blend the raspberries, powdered sugar and water in a strong blender or food processor to make the raspberry glaze. (You can reduce the amount of raspberries if you want to make a lighter pink glaze.)
  2. Toss the chocolate chips or bits in with the popcorn. (I used chunky bits, but chips work just as well.)
  3. Spoon the popcorn/chocolate mixture into individual bowls and drizzle the raspberry glaze on top. (The glaze can be messy, so drizzle it on beforehand and let it harden a bit, or provide spoons for your guests.)
