This easy to prepare Greek Caesar Salad calls for simple ingredients with Greek flavors, and it utilizes a homemade salad dressing.

What makes this salad Greek? Well, it’s Greek-style with the addition of feta cheese, kalamata olives, red onion and romaine lettuce. The dressing is a creamy lemon and oregano sort of dressing. Put it all together, and it’s so delicious!

Ingredients needed:

  • extra-virgin olive oil
  • freshly squeezed lemon juice
  • mayonnaise
  • garlic
  • dried oregano
  • salt and freshly ground black pepper
  • romaine lettuce
  • kalamata olives
  • red onion
  • crumbled feta cheese
  • croutons, optional

How to make Greek Caesar Salad:

PREPARE THE DRESSING:

  • In a medium bowl, whisk together all of the dressing ingredients. Cover and chill for up to 2 days.

ASSEMBLE THE SALAD:

  • In a large bowl, combine the lettuce, olives, onion and cheese. Add enough dressing to coat the lettuce, tossing gently.

Sprinkle with croutons, and serve with remaining dressing on the side. Some people like their salad tossed with a ton of dressing, and others light it coated a little lighter. That’s all completely up to you, so if you toss it lightly and then serve with the dressing on the side as well… then everyone will be happy!

If you would like to serve this Greek Caesar Salad with croutons, that’s totally up to you. I’m not a huge fan of croutons that you buy at the store in a box. But if you want to take the time to make some delicious homemade croutons, that will be much better!

Ingredients

DRESSING:

  • ¾ cup extra-virgin olive oil
  • ¼ cup freshly squeezed lemon juice
  • 1 tablespoon mayonnaise
  • 2 medium garlic cloves, minced
  • 1 teaspoon dried oregano
  • ¼ teaspoon salt
  • teaspoon freshly ground black pepper

SALAD:

  • 1 head romaine lettuce, chopped
  • ¾ cup halved kalamata olives
  • 1 small red onion, thinly sliced
  • ½ cup crumbled feta cheese
  • croutons (optional)

Instructions
