Churro Cake
Growing up in Miami, there is one thing that we can always look forward to when it comes time for the fair. Yep, it is all of that deliciously sinful fair food! One of our favorite fair foods is the Mexican churro.
Now, we can pretty much always get Mexican desserts churros in Miami. There are even carts on the side of the road that sell churros! But the Miami Dade County Youth Fair & Exposition is the first place I ate them, so I will always associate churros with the FAIR!
Churros are always on everyone's top list of things to nibble on at the fair. So I thought that this incredibly easy Churro Cake recipe would make a great replacement for well, every other time of the year!
Mexican churros desserts may not be made into a Mexican cake in Mexico, but we love this fun idea! Our Churros Cake is also a fun idea if you just love the taste of Cinnamon Toast Crunch!
Our recipe for Mexican Churro cake is made with...yep, you guessed it! We used Cinnamon Toast Crunch cereal for the cinnamon sugar mixture AND the cinnamon sugar coating in this Churro Layer Cake. Duh!
Thatt is why this psuedo recipe for Mexican cake is called "Incredibly Easy Churro Cake." As opposed to "spend all day slaving away over the stove, frying pan and dealing with spices and hot oil to make charro cake."
This way of making the latest of our Mexican cake ideas is just so much better! Ahem, I mean...EASIER. Our easy Mexican cake recipes are a lot of fun for the kids to get involved with too! I am all for skipping more difficult steps when it comes to the kitchen, especially when it comes to Mexican cakes and Mexican birthday cakes.
And well, to be quite honest, I usually have a box of Cinnamon Toast Crunch in the kitchen anyway. My daughter Angeline loves Cinnamon Toast Crunch so much that she inspired my Cinnamon Toast Crunch cookies!
Okay, okay...maybe I love them too! Maybe I will make a Churro Cheesecake cake next, what do you think? Or perhaps a Churro cake with cream cheese frosting? Even a Churro bundt cake sounds pretty amazing to me!

How to make a Churro Cake
This is such a quick and easy recipe that you might even want to use it to make a Churro birthday cake this year! A Churro tres leches cake or churro cupcakes would also be really fun for parties!
Here are the Ingredients that you will need to make this Churro Cake
Note that we are using a yellow cake mix to make our Mexican themed cakes today. This will save us a ton of time in the kitchen, as we are skipping all of the ingredients that you would normally have to use to make a cake from scratch.
- Yellow cake mix - You will need a box of Yellow Cake mix and the ingredients it calls for on the box. This is usually eggs and water or vegetable oil.
- Cinnamon Toast Crunch Cereal - We are going to use the cereal both in the cake batter as well as for the cinnamon sugar topping
- Ground cinnamon - We are going to use ground cinnamon to amp up the flavor of the cake, as the cereal pieces do not have enough cinnamon sugar coating to flavor the entire cake
- Hot fudge sauce - Or another kind of chocolate sauce

Since we are using the yellow cake mix as a shortcut, we can skip the usual baking ingredients.
We will save time AND money by not using the the usual unsalted butter room temperature, powdered sugar, baking powder, brown sugar, sour cream, vanilla extract and granulated sugar. Most cake mixes only require eggs, as well as water or vegetable oil.
Directions for how to make recipe for this Incredibly Easy Churro Cake
You are going to begin, of course, by preheating your oven to 350 degrees Fahrenheit.
Prepare the yellow cake mix according to the directions on the back of the cake mix box, making no substitutions. Add in 1 cup of whole Cinnamon Toast Crunch cereal and 2 teaspoons of the ground cinnamon to your prepared batter cake mix batter. Mix it all together and then pour the prepared cake batter into a greased cake pan.
Bake this Churro Cake at 350 degrees Fahrenheit for 30 minutes.
While the cake is cooling, top with crushed cinnamon toast crunch and warm hot fudge sauce. Do not wait until the cake has completely cooled, as you want the toppings to settle down into the warm, soft top when it is fresh out of the oven!
How to serve this Churro Cake
You can also top this delicious churro cake recipe with whipped cream or Cool Whip!
Of course, it tastes delicious with or without whipped topping. and you can also use a creamy, delicious vanilla ice cream - who doesn't love a piece of cake a la mode?

I know that many people still like to print out recipes and keep them in a recipe binder, or simply have the printed recipe sitting in front of them when it comes time to cook!

Churro Cake
Ingredients
- 1 box of yellow cake mix
- 2 cups of Cinnamon Toast Crunch Cereal
- 2 teaspoons of cinnamon
- hot fudge sauce
Instructions
- Preheat oven to 350 degrees.
- Prepare cake mix according to the box directions. Add in 1 cup of Cinnamon Toast Crunch and 2 teaspoons of cinnamon. Mix together and then pour into cake pan.
- Bake for 30 minutes.
- While the cake is cooling, top with crushed cinnamon toast crunch and warm hot fudge sauce. You can also top with whipped cream!
