WHY THIS EASY HONEY-GLAZED HAM AND VEGETABLES HOLIDAY MEAL WORKS




Ready in one hour! Start to finish a holiday restaurant-style menu is on the table in as little as 60 minutes- AMEN to that! 

These side dishes and main dishes are simple and canned vegetables do the work! Each recipe takes as little as 20 minutes to cook. The recipes include instructions and a formula that lets them simmer or bake at the same time. That means way more time to sit down, grab that glass of wine and enjoy time with the family!

This one-hour dinner recipe is healthier, and gluten-free, and can be made year-round! To make these holiday recipes without dairy use vegan butter or swap out milk for full-fat coconut milk in the creamed corn.

A wonderful way to enjoy a few servings of vegetables with your friends or family. Libby’s Vegetables add a much-needed veggie boost to the holiday table. It is important to consume at least five to nine servings of fruits and vegetables per day. When filling your plate, make sure they cover at least ½ of your plate.




WHAT GOES INTO THIS ONE HOUR DINNER




Creamed Corn– Y’all this creamed corn recipe will tantalize your taste buds! It comes together quickly with a few simple staple items and has a comforting slightly sweet flavor that compliments the ham.

Buttery Green Beans – Buttery green beans sautéed in only minutes with butter, salt, and a dash of pepper.

Sauerkraut – Fun fact, cabbage burns more calories to digest than the vegetable is made up of. That means it helps increase your fat-burning metabolism! Sauerkraut is fermented cabbage which also helps with digestion and enhancing gut enzymes.

Grandma’s “Almost” Famous Mashed Potatoes – You can add as much or as little butter as you desire. Grandma always does ½ a stick so I shrank that down for health purposes but honestly, the more butter the tastier.

Honey-Glazed Ham – No need to wait hours for a ham to warm and caramelized. Slice it and add this fantastic glaze that caramelizes during baking. The ham with glaze only needs about 15-20 minutes to cook!






HOW TO MAKE HOLIDAY DINNER RECIPE IN UNDER 1 HOUR




STEP 1: Start the Mashed Potatoes. Fill a large pot with water and turn the heat on high to boil. Cover it with a lid while you prepare the potatoes. Peel and dice the potatoes into cubes. Add to the boiling water with a dash of salt and boil for 20 minutes or until tender. Meanwhile, make the cream corn recipe.

STEP 2: Make the Creamed Corn while the mashed potatoes boil. Drain the canned corn and add to a medium-sized pot. I use Libby’s Whole Kernel Corn. Heat on medium-low and add the milk, cream cheese, 1 tablespoon of flour, butter, sugar, salt, and pepper to taste. Mix well and let simmer on low uncovered until everything is ready, or about 30 minutes. If it starts to thicken too much, add more milk and turn off the heat and warm right before serving. If it needs thickening after 30 minutes add 1 more tablespoon of flour and mix in.

STEP 3: Finish the potatoes, they should be done boiling now. Drain the potatoes and add the milk and butter, and using a potato masher to mash them. Add the onion powder, garlic powder, salt, and pepper and mix well. Cover and set aside with the heat off. Prep the honey-glaze for ham.

STEP 4: Prep and make the Honey-Glazed Ham. Preheat the oven to 425 degrees F. Move the baking rack to the upper 1/3 of the oven. Line a large baking sheet with parchment paper. Make the ham and honey-glaze. In a small bowl, mix together the lemon juice, honey, and Dijon mustard. Slice the ham into thick slices. Lay the slices together on the parchment-lined sheet pan. Generously coat all of the ham with the honey mixture. Bake the honey-glazed ham for 20 minutes or until it is thoroughly warmed through. Meanwhile, make the green beans.

STEP 5: Make the Buttery Green Beans while the ham cooks. While the ham bakes make the green beans. I use Libby’s Cut Green Beans. In a large saucepan warm the butter on medium heat to melt. Drain the green beans and add to the saucepan. Sauté for 5 minutes to warm. Sprinkle with salt and pepper to taste and almond slivers and heat for about 3 more minutes. Turn the heat off and cover to keep warm until the ham is finished cooking.

STEP 6: Open a can of Libby’s Crispy Sauerkraut (serve warm or room temp) and serve everything. Open the sauerkraut and serve in a bowl warmed or chilled. Remove the ham from the oven and serve everything together right away!




EXPERT TIPS




To save time in the kitchen, always plan ahead. Know where things are, have ingredients purchased, set the table the night before any big event, polish silver, and have serving dishes ready to go. It makes Thanksgiving or Christmas much easier to have the table set and everything ready to cook in advance. It also saves time to have serving dishes and plates set out on the counter to accommodate the amount each side dish serves.

Read the recipes through a couple of times and all directions before starting. Some of these recipes call for action during the time things are boiling or in the oven. Read through a few times so you are familiar with each step.

Ingredients

Mashed Potatoes


5 Yukon gold potatoes


2 tablespoons unsalted butter


1 cup whole milk


1/2 teaspoon onion powder


1/2 teaspoon garlic powder


1/2 teaspoon salt


1/2 teaspoon black pepper




Creamed Corn


2 14.5 ounce can Libby’s Whole Kernel Corn


3/4 cup whole milk


1 garlic clove grated


1/3 cup cream cheese preferably whipped


1 tablespoon unsalted butter


1 tablespoon gluten-free flour


1 teaspoon sugar


1/2 teaspoon black pepper


salt to taste (about 1/4 teaspoon-1/2 teaspoon)




Buttery Green Beans


2 14.5 ounce can Libby's Cut Green Beans


2 tablespoons unsalted butter

salt and pepper to taste

1/4 cup almond slivers




Maple Glazed Ham


2 pounds Smoked Boneless Ham, cut into thick slices (about 12 slices)


1/2 cup honey


2 tablespoons lemon juice


1 teaspoon Dijon Mustard




Sauerkraut

2 14.5 ounce can Libby's Crispy Sauerkraut




Instructions

Fill a large pot with water and turn the heat on high to boil. Cover it with a lid while you prepare the potatoes. Peel and dice the potatoes into cubes. Add to the boiling water with a dash of salt and boil for 20 minutes or until tender.
Meanwhile, while the potatoes boil, make the creamed corn. Drain Libby’s Whole Kernel Corn and add to a medium-sized pot. Heat on medium-low and add the milk, cream cheese, 1 tablespoon of flour, butter, sugar, pepper, and salt to taste. Mix well and let simmer on low uncovered until everything is ready, or about 10-20 minutes. Before serving, remove 3/4 cup of the corn and puree it in a food processor or blender and add it back to the pot and mix together. This can be done right when the ham comes out of the oven before serving. If it gets too thick turn off the heat and add a splash more milk and reheat lightly right before serving.
The potatoes should be about done now. Drain the potatoes and add the milk and butter, and using a potato masher, mash them. Add the onion powder, garlic powder, salt, and pepper and mix well. Cover and set aside with the heat off.
Preheat the oven to 425 degrees F. Move the baking rack to the upper 1/3 of the oven. Line a large baking sheet with parchment paper.
